*note, that this recipe can be made without the brown sugar, but it will be slightly less sweet. the original recipe does not have brown sugar.

Recipe from Woodpecker Willows Homestead

For information on the flowers...

* Sift together: 1 tsp salt, 4 tsp baking powder, 4 cups flour, 2 tbsp brown sugar, and 1 tsp cinnamon in a bowl

* In mixer bowl: 4 tbsp softened butter, 2 2/3 cups milk, 2 eggs, 1/2 cup oil, and 2 tsp vanilla.

* Also, 3/4 cup honey, or substitute (mix 1 1/4 cups sugar and 1/4 cup water, then measure out the 3/4 cup). Add to wet ingredients and whisk together, using the whisk attachment. (you can also do this with a hand-held mixer)

* Add: 2 cups dandelion petals to dry ingredients, mixing together by hand to coat all the petals.

* Add dry mixture to wet, a little at a time, with mixer on low. Scrape down sides as needed to get all the dry mixed in.

* Pour batter into a greased tin/pan (using 2 loaf pans here) to about halfway.
* Into oven preheated to 400 degrees F
* Bake for about 25 - 40 minutes,
until a toothpick that was inserted into the center comes out clean.

Enjoy!!!
